This wine was particularly appreciated by the Sun King, Louis XIV. You can serve it as an aperitif or with a dessert, because with the addition of fruit, it is a sweet sweet wine. It is somewhat reminiscent of hypocras, another wine from the Middle Ages which contained spices.

Ingredients:
1 liter of Burgundy wine
2 Pippin apples
2 yellow lemons
100g caster sugar

Preparation :
Cut the apples and lemons into slices.
Place them in a large container
Add the sugar.
Then the wine.
Leave to macerate for two hours.
Then filter the wine through a strainer.
Return the wine to the bottle and close with a cork.

Cook to the Marquis of Uxelles, governor of Chalon-surSaône, La Varenne is the author of Le Cuisinier françois, a major work marking the transition from the medieval cuisine of yesteryear to the great modern cuisine. Context The 17th century saw a culinary revolution that brought French gastronomy into the modern era. The heavily spicy flavors inherited from Middle Ages cuisine are abandoned in favor of the natural flavors of the products. Spices of exotic origin (cinnamon, cumin, ginger, nutmeg, cardamom, nigella, maniguette, etc.) are, with the exception of pepper, replaced by local herbs (parsley, thyme, bay leaf, chervil, sage, tarragon). Sweet and sour flavors are banned and any trace of sugar (considered a spice in the Middle Ages) outside of desserts is considered a bad taste in France.
