Vegetable Achard
INGREDIENTS
150 g white cabbage
150 g cabbage
150 g green beans
150 g carrots
2 large green chillies
1 large onion
2 cm ginger root
2 cloves garlic
1/2 tsp turmeric
4 tbsp sunflower oil
1 tbsp lemon juice
Bird's eye chillies to taste
Salt
PREPARATIONS
Wash and finely julienne the vegetables.
Mince the garlic, ginger and salt together. Slice the onion into thin strips.
Sauté the chopped onion, then add the garlic-ginger mixture, followed by the turmeric and mix well.
Then add the vegetables and mix well (over a high heat). This is a quick operation, so the vegetables should not cook... Finish with the lemon juice.
Remove and leave to cool.
It's better to prepare the day before.
