Norwegian Gingerbread Cupcakes (x4)
Norwegian Gingerbread Cupcakes
Ingredients :
100 grams of butter
2 eggs
2 1/2 dl brown sugar
1 dl of condensed milk/Tørsleffs condensed milk
1 teaspoon of cinnamon
1/2 teaspoon cardamom
1/2 teaspoon ginger
1/2 teaspoon cloves
1 teaspoon of baking powder
1 1/4 dl of wheat flour
Icing
200 grams of cream cheese
2 dl of powdered sugar
1 tablespoon butter at room temperature
A few drops of lemon juice
Chocolate balls, currants, cake sprinkles or other decorations on top
Set the oven to 175 degrees
Spread 12 cupcake shapes on a baking sheet
Melt the butter and let cool slightly
Beat the eggs and sugar.
Add the butter, condensed milk and spices.
Mix the flour and baking powder in another bowl and gently fold into the dough using a spatula.
Pour the batter into the molds, a little more than half full, and bake them for 15 to 20 minutes.
Beat together the cream cheese, icing sugar and butter with an electric mixer. Use a piping bag and spread the icing on top once the cakes have cooled. Decorate with desired decoration.
