Salmon steak with shellfish, shrimp and scallops
1 Salmon Steak, approximately 3 cm thick
2 scallops
1 handful of shells
1 handful of mussels
5 large raw shrimp
2 Glasses of dry white wine
1 chopped shallot
50 gr Butter
125gr Fresh cream
Salt
1 pinch of Espelette pepper
Realization
Brown the shallot in the butter
Over low heat in the same pan
Cook your scallops (2 minutes per side)
Book
Cook your salmon in the same pan (3 minutes per side)

Cook your shrimp (5 to 6 minutes)

Open your shellfish by adding the white wine

Peel your shrimp and keep the shells
Remove the shells, but keep some for decoration
In the cooking utensil put the shrimp shells, moisten with two glasses of water
Let reduce by half
Add your crème fraîche and a pinch of chilli
Let reduce by half
Adjust with salt
Strain the sauce
Add the shellfish, shrimp, and scallops
Leave to infuse for a few minutes
Dress up
Salmon, top with the sauce, put the shrimp around it and place the scallops on top
