Macaroni au Chorizo Spécialité Espagnole
Chorizo Macaroni Spanish Specialty
Ingredients :
400 g macaroni (or any other form of pasta you prefer)
200 g chorizo, cut into rounds
1 Onion, chopped
2 cloves of garlic, chopped
1 Leek
1 red pepper
1 Guindilla pepper
800 g tomatoes
100 ml of white wine
1 bay leaf
1 case of fresh oregano
10 g of Sugar
1 teaspoon of paprika
1 pinch of cayenne pepper (optional, for a little heat)
150 g grated cheese
Salt and pepper, to taste
Extra virgin olive oil
Instructions :
Cooking the pasta:
Cook the macaroni according to package directions in a large pot of salted water. Drain them and reserve.
Preparation of the sauce:
In a large skillet, heat a little olive oil over medium heat. Add the onion and garlic, fry until golden brown.
Add the chorizo slices to the pan and sauté them to release their flavors.
Pour the tomatoes into the pan, add the paprika, cayenne pepper (if desired), salt and pepper. Let the sauce simmer for about 15-20 minutes.
Assembly :
Add the cooked macaroni to the sauce in the pan. Mix well so that the pasta is well coated with the sauce.
Add the grated cheese and brown
