Pasta alla Norma Sicilian Specialty

Pasta alla Norma:
Ingredients :
400 g pasta (preferably rigatoni or spaghetti)
4 eggplants, cut into cubes
2 cloves of garlic, minced
800 g crushed tomatoes (canned or fresh)
1/2 cup salted ricotta cheese, crumbled
Fresh basil, chopped
Extra virgin olive oil
Salt and pepper, to taste

Instructions :
Saute eggplant cubes in olive oil until golden brown. Remove them from the pan and set them aside.
In the same pan, brown the garlic in a little olive oil. Add the crushed tomatoes and simmer until the sauce thickens.
Add the browned eggplant cubes to the tomato sauce. Season with salt and pepper. Let it simmer for about 15-20 minutes.
Meanwhile, cook pasta according to package directions.
Mix the cooked pasta with the eggplant sauce. Garnish with crumbled ricotta cheese and chopped fresh basil.
Serve hot and enjoy this delicious Pasta alla Norma.
