Finnish salmon soup (Lohikeitto)

Ingredients :
500g salmon fillet, cut into pieces
4 potatoes, peeled and diced
2 carrots, peeled and cut into slices
1 leek, washed and cut into slices
1 onion, chopped
1.5 liters of fish broth or water
1 bay leaf
5 grains of black pepper
Salt, pepper, to taste
300ml liquid cream
1 tablespoon of butter

Instructions :
Preparation of vegetables:

In a large saucepan, melt the butter. Add the onion, leek, carrots and sauté for a few minutes until slightly softened.
Adding the potatoes:

Add the diced potatoes and mix well with the vegetables.
Cooking vegetables:

Pour the fish stock or water into the pan. Add the bay leaf and peppercorns. Simmer until the vegetables are tender.
Cooking the salmon:

Add the salmon pieces to the soup. Season with salt and pepper. Cook over low heat until the salmon is cooked.
Adding the cream:

Reduce the heat to low and carefully pour the cream into the soup. Mix well.
Seasoning adjustment:

Taste the soup and adjust the seasoning to taste, adding salt or pepper if necessary.
Service :

Remove the bay leaf and serve the salmon soup hot. You can also add some chopped fresh dill on top before serving.
