Vegetable Meatballs

Here is a simple and delicious recipe for vegetable meatballs:

Ingredients :
2 carrots, grated
1 zucchini, grated
1 onion, finely chopped
2 cloves of garlic, crushed
1 red pepper, finely chopped
1 cup oatmeal
2 eggs
1/2 cup breadcrumbs
1/4 cup grated Parmesan (optional)
2 tablespoons fresh parsley, chopped
Salt and ground black pepper, to taste
Olive oil for cooking

Instructions :
Preheat the oven to 180°C (350°F).
In a large skillet, heat a little olive oil over medium heat. Add the onion and garlic, and sauté until soft and lightly browned.
Add the grated carrots, grated zucchini and red pepper to the pan. Cook for about 5 minutes, until the vegetables are tender-crisp. Remove from heat and let cool slightly.
In a large bowl, mix the cooked vegetables with the oats, eggs, breadcrumbs, grated Parmesan (if using), fresh parsley, salt and pepper. Mix well until you obtain a homogeneous consistency.
Form balls with the vegetable mixture and place them on a baking tray lined with parchment paper.
Bake the meatballs for about 20-25 minutes, or until they are golden brown and cooked inside.
Serve hot with homemade tomato sauce or garlic cream sauce, and accompany with rice, pasta or grilled vegetables.
