Parmentier of striped skate with capers
Here is a recipe for shredded skate parmentier with capers:
Ingredients :
300 g of skate wings
1 liter of fish stock (see recipe in the basics)
800 g of crushed potatoes whipped in butter
2 tablespoons capers, rinsed and drained
2 tablespoons of butter
1 tablespoon of neutral oil
1 onion, finely chopped
Juice of a lemon
Salt and ground black pepper
Instructions :
In a large saucepan, bring the fish stock to a simmer. Immerse the skate wings in it for about 10 minutes, until they are half cooked.
Drain them and let them cool slightly.
Once cooled, carefully remove the skin from the skate wings and shred the flesh into small pieces. Reserve.
In a frying pan, melt the butter and oil over medium heat. Add the onions and sauté until soft and lightly browned.
Add the capers to the pan and sauté them with the onions for a few minutes.
Add the shredded skate pieces to the pan and toss well to coat them with the onion and caper mixture.
Add the lemon juice and season with salt and ground black pepper to taste. Mix gently to evenly distribute the flavors.
Dressing:
Spread a layer of mashed potato, a layer of skate, etc. in a rectangular baking dish.
Sprinkle with grated cheese
Switch to salamander
Serve
