Puff pastry with roasted vegetables and marinated shrimp
Here is a recipe for puff pastry with roasted vegetables and marinated shrimp:
Ingredients :
1 puff pastry (ready-made or homemade)
200 g shrimp, peeled and deveined
2 zucchini cut into slices
1 red pepper cut into strips
1 red onion, diced
2 cloves of garlic, minced
2 tablespoons of olive oil
Salt and ground black pepper, to taste
Herbes de Provence (or other herbs of your choice)
Lemon juice
Fresh goat cheese (optional)
1 egg, beaten (for gilding)
Sesame or poppy seeds (optional, for garnish)
Instructions :
Preheat your oven to 200°C (thermostat 6-7).
In a bowl, mix the peeled shrimp with a drizzle of olive oil, salt, ground black pepper and a little lemon juice. Let marinate for about 15-20 minutes while you prepare the vegetables.
In another bowl, mix the zucchini slices, red pepper and red onion strips with olive oil, minced garlic, Provence herbs, salt and ground black pepper.
Roast the vegetables in the oven on parchment paper
Spread the puff pastry on a baking tray lined with parchment paper. Lightly prick the surface of the dough with a fork to prevent it from swelling too much during cooking.
Arrange the grilled vegetables on the puff pastry, leaving a free edge of about 2 cm all around.
Arrange the marinated shrimp on the vegetables.
If desired, add small pieces of fresh goat cheese to the shrimp.
Fold the edges of the puff pastry over the vegetables and shrimp, pressing them lightly to form a border.
Brush the edge of the puff pastry with the beaten egg to obtain a nice golden color.
If desired, sprinkle sesame or poppy seeds around the edge of the dough.
Place the puff pastry with roasted vegetables and marinated shrimp in the preheated oven and bake for about 25-30 minutes, or until the pastry is golden and crispy.
Once cooked, remove the dough from the oven and let it cool slightly before cutting it into pieces and serving.
This puff pastry with roasted vegetables and marinated shrimp is delicious served hot or at room temperature, as a starter or as a main course accompanied by a green salad. Enjoy your food !
