Beef Bourguignon Steamed Potatoes

Here is a classic recipe for beef bourguignon, a comforting and delicious French dish:

Ingredients :

800 g beef cheek, cut into cubes
200 g of smoked bacon
2 carrots, cut into thick rounds
2 onions, chopped
2 cloves of garlic, minced
250 g button mushrooms, cut into quarters
750 ml red wine (preferably Burgundy)
500 ml beef broth
2 tablespoons of tomato paste
2 tablespoons of flour
2 bay leaves
4 sprigs of fresh thyme
Salt and pepper, to taste
Olive oil, for cooking

Instructions :
Season the beef cheek cubes with salt and pepper, then brown them in a large casserole dish with a little olive oil over medium-high heat. Remove the meat from the casserole and set aside.
In the same casserole dish, brown the bacon until they are golden and crispy. Then add the onions and garlic, and fry until soft and lightly browned.
Sprinkle the flour over the bacon, onions and garlic, mix well and cook for a minute.
Add the tomato paste, carrots, mushrooms, bay leaves and thyme to the casserole dish. Return the browned beef cubes to the casserole dish.
Pour the red wine and beef broth into the casserole, scraping the bottom to loosen the juices. Make sure the meat and vegetables are well covered with liquid.
Bring everything to a boil, then reduce the heat to low. Cover the pot and simmer gently for about 2 to 3 hours, or until the meat is tender and the sauce has thickened.
Adjust the seasoning with salt and pepper to taste.
Serve the beef bourguignon hot, accompanied by steamed potatoes, mashed potatoes or fresh pasta. Optionally garnish with chopped fresh parsley for added flavor.
