Ingredients :
12 Special Oysters No. 2
1 glass(es) Champagne
1 egg yolk(s)
3 tbsp. tbsp. crème fraîche
White pepper
Preparation :
Once opened, poach your oysters in their filtered water with Champagne for 2 minutes (without boiling).
Place the oysters in the previously cleaned shells.
Cook the egg yolk in the cream, add the oyster liquid little by little, stirring constantly.
Rectify
Coat each oyster with sauce.
Pass the oysters in the salamadre for 1 minute so that they are barely browned.
