Fond Blanc De Poultry
Ingredients for 1.5 liters:
1 kg of chicken giblets
1 carrot
1 onion
1 leek
1 chopped shallot
1 bouquet garni
2 grains of black pepper and coriander
1/2 glass of white wine
Preparation :
Place the giblets and sliced vegetables in a saucepan over medium heat. Brown them without coloring for 2 to 3 minutes.
Add the white wine and let reduce until dry.
Moisten with 1.5 liters of cold water
Add the bouquet garni and the peppercorns and coriander.
Cook over low heat for approximately 1 1/2 hours, skimming frequently.
Switch to Chinese.
Reserve in the cold and degrease the next day.
Freeze as ice cubes and thaw as needed.
