Ingredients
1 Rooster of the Meadows of 1,600 / 1,800 kg
(Le Coq des Prés is an organic, local, tasty and fair trade chicken, raised by around forty poultry farmers in Wallonia Belgium keen to produce quality poultry meat!)
500 gr of Coq des Prés livers
Madeira
1 large shallot
Tarragon
Preparation
Prepare the stuffing with the livers which have been macerated for 2 hours in Madeira
Put it all through the mill
Add the chopped shallot and tarragon – salt and pepper.
Open and stuff the Coq des Prés – sew the incision
Season and top with butter
Roast in a dish in the oven – 210°C for 1h30
Water it from time to time
Once cooked, reserve the chicken
Degrease the sauce
Deglaze the Madeira sauce.
Filter and serve in a sauceboat
