Veal Noisette with morels
Veal hazelnuts with morels
Here is a simple and delicious recipe for veal nuts with morel sauce:
Ingredients :
For the veal steaks:
8 Hazelnuts of veal
Salt and pepper, to taste
Butter and neutral oil so much
For the morel sauce:
1 shallot, finely chopped
Butter and neutral oil so much
100 g preferably fresh or dried morels (rehydrated in hot water for about 30 minutes)
250 ml of veal broth
150 ml fresh cream
Salt and pepper, to taste
Instructions :
Preparation of veal hazelnuts:
Season the veal nuts with salt and pepper on both sides.
In a frying pan, heat butter and oil over medium heat.
Sear the veal nuts for about 3-4 minutes on each side (cooking time depends on the thickness of the steaks and your cooking preference).
Remove the hazelnuts from the pan and let them sit for a few minutes.
Preparation of the morel sauce:
In the same pan, add a little more oil if necessary.
Add the chopped shallots and sauté until soft.
Add the morels and sauté them for a few minutes.
Pour the veal stock into the pan and simmer for about 5 minutes.
Add the crème fraîche and mix well. Cook over very low heat until the sauce thickens slightly.
Season with salt and pepper to taste.
Assembly :
Arrange the veal snoisettes on serving plates.
Generously coat the steaks with the morel sauce.
Serve immediately with accompaniments of your choice, such as plain fried potatoes, rice or endive fondue. Enjoy your food !
