Grilled Chipirons Spain
Ingredients :
500 g squid (small squid), cleaned and ready to cook
Juice of 1 to 2 lemons
2 tablespoons of extra virgin olive oil
2 cloves of garlic, finely chopped
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions :
Preparation of the squids:
Rinse the squids in cold water and drain them.
If the squids are whole, remove the heads, internal cartilages and thin outer skin. If you use already cleaned squids, make sure they are well drained.
Marinade:
In a bowl, mix the olive oil, lemon juice, chopped garlic, salt and pepper. This simple marinade will add flavor to the squids.
Marinating the squids:
Place the squids in a shallow dish and pour the marinade over them. Make sure the squids are well coated with the marinade.
Leave to marinate for at least 30 minutes to 1 hour in the refrigerator.
Preheating the grill:
Preheat your grill to medium to high heat.
Cooking squids:
Drain the squids from the marinade and place them on the preheated grill.
Grill them for 2 to 3 minutes on each side, until cooked and lightly browned. Chipirons cook quickly, so watch them carefully to avoid overcooking them.
Service :
Remove the squid from the grill and place them on a serving platter.
Sprinkle with chopped fresh parsley.
Serve the grilled squids with extra lemon wedges for those who like a touch of acidity.
