Ficelle Picarde is a regional specialty of Picardy in France. It is a filled crepe, traditionally with ham, mushrooms and a gruyere béchamel. Here is a recipe for making traditional Ficelle Picarde:

Ingredients for the pancake batter:
250g of flour
2 eggs
500ml of milk
1 pinch of salt
Butter for cooking pancakes
Ingredients for the filling:
200g white ham, diced
200g button mushrooms, sliced
50g butter
50g flour
500ml of milk
100g grated gruyere
Salt and pepper, to taste
Grated nutmeg
1 lemon juice

Instructions :

Pancake batter and cooking:
In a large bowl, mix together the flour, eggs and salt.
Gradually add the milk while mixing to avoid lumps.
Let the dough sit for about 30 minutes.
Cook the pancakes.

Prank call:
Preparation of the béchamel:
In a saucepan, melt the butter. Add the flour, stirring to form a roux.
Gradually add the milk, continuing to stir until the sauce thickens.
Season with salt, pepper and grated nutmeg.

Cooking mushrooms and ham:
In a pan, sauté the sliced ​​mushrooms in a little butter until they are tender.
Add the diced ham to the pan and heat briefly.
Add the lemon juice

Assembly of the Ficelles Picardes:
Place a spoonful of the filling in the center of each pancake and roll them up.
Place them in a baking dish. and top them with béchamel and gruyere:

Bake in a preheated oven at 180°C for about 15 to 20 minutes, until the top is golden and the cheese melts.

Serve the Ficelles Picardes hot, accompanied by a light green salad if you wish. It’s a delicious specialty to taste!
