Sicilian Arancini
Arancini are delicious fried rice balls of Sicilian origin, often stuffed with a variety of tasty fillings. Here is a basic recipe for Sicilian arancini:
Ingredients :
2 cups Arborio rice or risotto rice
4 cups of vegetable broth
1 onion, finely chopped
2 cloves of garlic, minced
1/2 cup dry white wine (optional)
1/2 cup grated parmesan
2 eggs, beaten
Breadcrumbs
Olive oil for frying
Salt and ground black pepper, to taste
Topping (of your choice):
Mozzarella, cut into small cubes
Minced meat, previously cooked with Italian spices (for example, oregano, basil, thyme)
Tomato sauce (marinara sauce), for serving
Instructions :
In a saucepan, heat the vegetable stock until it simmers.
In another large saucepan, heat a little olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
Add the rice and stir to coat with oil. Let it cook for about a minute.
Pour the white wine into the pan and simmer until it is almost completely absorbed by the rice.
Add a ladle of hot broth to the pan with the rice. Stir until the broth is absorbed. Repeat this process, adding a ladleful of broth at a time, until the rice is cooked, usually about 18-20 minutes. The rice should be tender but still slightly firm in the center.
Stir the grated parmesan into the cooked rice. Season with salt and pepper to taste. Let cool slightly.
Once the rice is cool enough to handle, take a small amount of rice in the palm of your hand and form a hollow ball.
Add your chosen topping (for example, a piece of mozzarella or a spoonful of minced meat) to the center of the rice ball, then close the ball to seal the topping inside. Roll the ball in the beaten eggs, then in the breadcrumbs to coat well.
In a deep saucepan, heat enough olive oil for frying over medium-high heat. Fry the arancini until golden and crisp, about 3-4 minutes per side. Drain on paper towels.
Serve hot with tomato sauce for dipping.
