Coral lentil dahl (Vegetarian)

Here is a simple and delicious recipe for red lentil dahl:

Ingredients :

1 cup of coral lentils
1 onion, finely chopped
2 cloves of garlic, crushed
1 piece of fresh ginger (about 2 cm), grated
1 tablespoon of vegetable oil
1 teaspoon of cumin seeds
1 teaspoon of coriander seeds
1 teaspoon of turmeric powder
1/2 teaspoon paprika
1/2 teaspoon mustard seeds (optional)
400 ml coconut milk
2 cups of water
Salt, to taste
Lemon juice (optional)
Fresh coriander, to garnish

Instructions :

Rinse the red lentils under cold water until the water runs clear, then drain.
In a large saucepan, heat the vegetable oil over medium heat. Add the cumin, coriander and mustard seeds (if using) and fry for a few minutes until they start to crackle and release their fragrance.
Add the onion, garlic and grated ginger to the pan. Saute until the onion is translucent.
Stir the turmeric and paprika into the onion mixture and cook for a minute to release the flavors.
Add the coral lentils to the pan and mix to coat them well with the spices.
Pour the coconut milk and water into the saucepan. Bring to the boil, then reduce the heat and simmer over low heat for about 15 to 20 minutes, or until the lentils are tender and the dahl has thickened. Stir occasionally to prevent the lentils from sticking to the bottom of the pan.
Season with salt, to taste. If desired, add a little lemon juice to enhance the flavors.
Garnish the dahl with chopped fresh cilantro before serving. You can also serve it with basmati rice or naan bread for a complete meal.
