Mauritius chili cake (Vegetarian)
Chili cake is a culinary specialty of Mauritius, very popular as a snack or accompaniment. Here is a recipe for preparing Mauritian pepper cakes:
Ingredients :
250g peeled yellow lentils
1 onion, finely chopped
2 cloves of garlic, crushed
2 to 3 green chili peppers, finely chopped (adjust according to your spiciness preference)
2 tablespoons fresh cilantro, chopped
1 teaspoon of turmeric powder
1 teaspoon of cumin powder
1 teaspoon of salt
Vegetable oil for frying
Instructions :
Rinse the yellow lentils under cold water, then soak them in water for at least 2 hours.
Drain the lentils and place them in a blender or food processor. Add the onion, garlic, green chilies, fresh coriander, turmeric, cumin and salt. Mix until you obtain a smooth and homogeneous paste. If necessary, add a little water to make mixing easier, but be careful not to make the dough too runny.
Transfer the dough to a bowl. The texture should be thick but pliable.
In a large skillet, heat enough vegetable oil for frying over medium heat.
With your lightly oiled hands, scoop out a small amount of lentil paste and shape it into small walnut-sized balls.
Gently place the dough balls in the hot oil. Fry the chili cakes in small batches at a time, being careful not to crowd them too much in the pan to prevent them from sticking together.
Fry the chili cakes until golden brown and crispy, turning occasionally for even cooking. This usually takes around 5-7 minutes.
Once golden, remove the chili cakes from the pan and drain them on absorbent paper to remove excess oil.
Serve the chilli cakes hot, accompanied by chutney or chilli sauce for even more flavour.
