Roasted pigeon glazed with fig jam and peas
Here is a recipe to prepare a delicious roast pigeon glazed with fig jam:
Ingredients :
2 whole pigeons, cleaned and trimmed
4 tablespoons of fig jam
2 tablespoons of balsamic vinegar
2 tablespoons of soy sauce
2 tablespoons of honey
2 cloves of garlic, minced
1 teaspoon grated fresh ginger
Salt and ground black pepper, to taste
Olive oil, for cooking
A few sprigs of fresh thyme (optional)
Fresh fig wedges to garnish (optional)
Instructions :
Preheat your oven to 200°C (390°F).
In a bowl, mix the fig jam, balsamic vinegar, soy sauce, honey, minced garlic and grated ginger. Season with salt and pepper to taste.
Generously brush the pigeons with half of the glazed fig jam mixture.
Place the pigeons in a baking dish. Optionally add a few sprigs of fresh thyme for more flavor.
Place the dish in the preheated oven and roast the pigeons for about 20 to 25 minutes, basting them occasionally with the rest of the glazed fig jam, until they are nicely browned and cooked to your liking . (Cooking time may vary depending on the size of the pigeons and the power of your oven.)
Once cooked, remove the pigeons from the oven and let them rest for a few minutes before cutting them.
During this time, you can slightly reduce the remaining cooking juices in the dish to make a more concentrated sauce, if desired.
Serve the roasted pigeons glazed with fig jam hot, garnished with fresh fig quarters if you wish, with the sauce on the side.
