Sweet potato gnocchi with sage butter stuffed with Fourme d’Ambert
Here is a recipe to prepare sweet potato gnocchi with sage butter stuffed with Fourme d’Ambert:
Ingredients :
For the gnocchi:
2 large sweet potatoes
1 cup flour (plus extra for dusting)
1 teaspoon of salt
1 pinch of black pepper
For the stuffing:
100g Fourme d’Ambert, crumbled
2 tablespoons of butter
10-12 fresh sage leaves, finely chopped
For the sage butter:
4 tablespoons of butter
10-12 fresh sage leaves
Salt and pepper, to taste
Instructions :
Preheat your oven to 200°C (390°F). Prick the sweet potatoes with a fork and place them on a baking sheet. Bake them for about 45-50 minutes or until tender.
Remove the sweet potatoes from the oven and let them cool slightly. Peel them and mash the flesh in a large bowl using a fork or a potato masher.
Add the flour, salt and pepper to the mashed sweet potatoes. Mix well until the dough is smooth. If the dough is too sticky, add a little more flour.
Divide the dough into several portions and roll each portion into a long sausage about 2 cm in diameter. Cut each sausage into small pieces to form the gnocchi.
Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they rise to the surface, about 2-3 minutes. Use a slotted spoon to remove them from the water and place them on a plate.
While the gnocchi cooks, prepare the sage butter. Melt the butter in a skillet over medium heat. Add the sage leaves and cook until crispy, about 1-2 minutes.
Season with salt and pepper to taste. Remove the pan from the heat and set aside.
For the stuffing, mix the crumbled Fourme d'Ambert with the melted butter and the chopped sage leaves.
When the gnocchi are cooked, make an incision in the side of each gnocchi and fill it with a little Fourme d'Ambert stuffing.
In a large skillet, melt some sage butter over medium heat. Add the stuffed gnocchi and sauté for a few minutes until lightly browned.
Serve the sweet potato gnocchi stuffed with Fourme d’Ambert with the remaining sage butter. You can sprinkle them with additional grated cheese and sage leaves to decorate.
