Hypocras Medieval Wine With Royal Spices (Spiced wine called “pimen” (or “chili”))
Ingredients for a 1 liter bottle:
1 L of wine
100 g of liquid honey
10 g of cinnamon
(Known since Antiquity, cinnamon is an aromatic plant substance coming from the inner bark of the cinnamon tree. Its original shape resembles small tubes, but it is often consumed ground).
5g ginger
5 g of mace
(Mace, also called “nutmeg flower”, is the spice obtained from the seed coat of the nutmeg nut (the aril more precisely)).
10 grains of cardamom
(Cardamom is a spice with a camphorous and slightly lemony taste, resembling pine sap in some ways. Its flavor is powerful and it is best to use it sparingly).
3 cloves
(Clove is a spice obtained from the flower buds of the Clove tree of the Myrtaceae family and the Syzygium genus (Syzygium aromaticum)).
Preparation :
Choose the wine and leave it at room temperature (Red, White or Rosé)
Grind the royal spices
Place the spices in a tea bag so as not to have any deposits in the medieval wine.
Mix honey and wine
Add the spices to the wine
Leave to macerate for 12 hours, leaving everything at room temperature+
Remove the spices
Filter
Pour the preparation into a bottle
Leave the hypocras to cool
Leave to rest for 2 to 3 days.
