One-Pot Rice with Sausage, Fennel, and Bell Pepper

The One-Pot Rice with Sausage, Fennel, and Bell Pepper is a relatively modern and popular recipe in everyday cooking, especially because of its simplicity and practicality. The "one pot" concept (cooking all ingredients in a single pot or pan) has gained popularity in recent years as it allows for a tasty dish with reduced washing up and preparation time.

The exact origin of this particular recipe is not clearly defined, but it is largely inspired by Mediterranean culinary traditions, particularly Italian and Spanish cuisines, where sausages, bell peppers, fennel, and tomatoes are common ingredients in many dishes. The idea of using one dish to cook all the ingredients together is also characteristic of many recipes from Southern Europe, where simplicity and conviviality are key in meal preparation.

Thus, this recipe could be a modern adaptation of traditional cooking techniques, combining elements of Mediterranean cuisine in a quick and practical format for family or weeknight meals.

One-Pot Rice with Sausage, Fennel, and Bell Pepper

Ingredients:

  • 250 g of spicy Italian sausage (meat only)
  • 1 medium fennel bulb, thinly sliced
  • 1 red bell pepper, diced
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 1 cup long-grain rice
  • 400 ml chicken or vegetable broth
  • 125 ml (1/2 cup) dry white wine
  • 35 g (1/2 cup) finely grated fresh Parmesan cheese
  • 1 can (400 g) crushed tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the ingredients: Thinly slice the fennel, dice the bell pepper, slice the onion, and mince the garlic. Set aside.

  2. Cook the sausages: In a large, deep skillet, heat the oil over medium-high heat. Cook the sausage meat, breaking it apart with a wooden spoon until it starts to brown. Remove from the pan and set aside.

  3. Sauté the vegetables: In the same pan, add the onion, garlic, fennel, and bell pepper. Sauté for about 5 minutes, until the vegetables are tender and slightly golden.

  4. Add rice and spices: Add the rice to the pan with the vegetables. Sprinkle with paprika, salt, and pepper. Stir well to coat the rice with the spices and oil. Let it cook for 2-3 minutes.

  5. Cook the rice: Pour in the chicken (or vegetable) broth, crushed tomatoes, and wine. Stir well and add the browned sausage. Cover the pan and let it simmer on low heat for 18-20 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent the rice from sticking.

  6. Finish: Once the rice is cooked, remove from heat and let it rest, covered, for 5 minutes. Adjust seasoning if needed.

  7. Serve: Garnish with chopped fresh parsley before serving. This dish can be served with a green salad or enjoyed on its own.

Suggested Drinks to Pair with This Dish:

  1. Dry White Wine:

    • Sauvignon Blanc: Light and fresh with a pleasant acidity, it pairs well with the vegetables and herbaceous flavors of fennel and bell pepper.
    • Vermentino: An Italian wine that brings lightness with citrus notes and a nice freshness.
    • Unoaked Chardonnay: A light, unoaked Chardonnay is a perfect option for a meal where you want to keep the dish light.
  2. Rosé Wines:

    • Provence Rosé: Very light and fruity, perfect for a summer meal. Its freshness pairs well with the flavors of the dish.
    • Loire Rosé: With its subtle sweetness and freshness, it complements the richness of the sausage and vegetables.
  3. Light Beer:

    • Witbier (White Beer): A light beer with subtle citrus and spice flavors, making it a great refreshing option. It won’t overpower the dish.
    • Pilsner: A classic pilsner with a soft bitterness that will balance the flavors of the meal.
  4. Non-Alcoholic Drinks:

    • Sparkling Water with Lemon: A refreshing and light option, sparkling water with a slice of lemon or a few mint leaves is ideal.
    • Homemade Iced Tea: Brew a light green tea or herbal tea, add ice, a bit of honey, and a slice of lemon for a healthy and refreshing drink.
  5. Light Cocktail (if you prefer a touch of alcohol):

    • Spritz (Prosecco, Aperol, Sparkling Water): A light and fruity cocktail, ideal to accompany a Mediterranean dish like this. It’s low in alcohol and offers a pleasant freshness.
    • Gin and Tonic with a touch of cucumber: A refreshing gin and tonic with cucumber and a bit of mint pairs wonderfully with the fennel and bell pepper.

Enjoy your meal!
