Farmed Lion Meat Burgers with Yellow Onion and Spinach

Ingredients (for 4-6 burgers)

Burgers

  • 680 g of farmed lion meat (backstrap) or farmed meat (beef or pork)
  • 225 g of beef fat
  • Salt, pepper
  • 3 jalapeño peppers
  • 1 white onion
  • 1 yellow onion
  • 1 egg
  • 120 g of breadcrumbs

Garnish

  • 8 fresh spinach leaves
  • 1 yellow onion, thinly sliced
  • 1 tablespoon of olive oil
  • 1 teaspoon of unrefined sugar

Instructions

  1. Prepare the meat:

    • Take the meat out of the fridge 1 hour before starting.
    • Cut the meat into pieces suitable for your grinder.
    • Grind the meat and fat together using a coarse plate in the grinder.
  2. Add vegetables and seasonings:

    • Finely chop the white onion and jalapeños.
    • Sauté them over low heat for about 5 minutes.
    • Let them cool.
    • Mix the cooled vegetables into the ground meat (adjust the quantity to your taste).
    • Add the egg and breadcrumbs, then mix everything by hand to evenly distribute the ingredients.
  3. Prepare the garnish:

    • Heat the olive oil in a pan over medium heat.
    • Add the sliced yellow onion and cook until it becomes translucent, then add the sugar and let it caramelize.
    • Set aside.
    • Blanch the spinach (briefly boil them, then plunge them into cold water). Remove from heat and set aside.
    • If you are using young spinach leaves, you can leave them raw and increase the quantity of leaves.
  4. Form the patties:

    • Shape the mixture into patties weighing about 110 g each.
    • Be careful not to over-handle the meat to avoid compacting it too much.
  5. Cook the patties:

    • Heat your grill or a pan over medium-high heat.
    • Cook the patties until the internal temperature reaches 74°C (165°F).
  6. Assemble the burgers:

    • Place the cooked patties in burger buns.
    • Top each burger with the caramelized yellow onion and spinach mixture.

Notes:

  • Caramelized yellow onion: This garnish adds a sweet and rich depth of flavor to the burgers. Feel free to adjust the amount of onion to your liking.
  • Spinach: Spinach adds freshness and a touch of greenery to the burger, balancing the rich flavor of the meat.
