Eat Main Endive and Feta

Ingredients :
120g of endives,
30g of feta,
5cl of liquid crème fraîche,
1cl of lemon juice,
1/4 clove of garlic,
2cl olive oil,
20g onions,
5cl of white wine,
5g of white background,
1.2g + 0.4g of agar-agar,
Salt, pepper, nutmeg.

Instructions:
Slice the endives and onion, sweat in olive oil then deglaze with wine
white.
Moisten with a light white stock and lemon juice then leave to stew for 30 minutes, covered.
Mix the endives until you obtain a homogeneous soup.
Add the agar-agar then reduce to dryness.
Start a white base, add the cheese and cream lightly.
Keep simmering until the feta has completely melted.
Add the agar-agar and maintain a boil for 3 minutes.
Garnish the olive oil-lined mussels with a first layer of endives, then a second layer of feta cream.
Cool in a cold room for 45 minutes then unmold.
