Bulgur and cabbage stew (Vegetarian)
Here is a simple recipe for bulgur and cabbage stew:
Ingredients :
200 g bulgur
1 small cabbage
1 onion
2 carrots
2 tomatoes
2 cloves garlic
1 tablespoon of olive oil
1 teaspoon of paprika
1 teaspoon of cumin
Salt and pepper to taste
500 ml vegetable stock
Instructions :
Start by preparing the vegetables. Slice the onion, chop the garlic, cut the carrots into slices, chop the tomatoes and cut the cabbage into strips.
In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and fry for a few minutes until translucent.
Add the carrots and fry them for a few more minutes.
Add the tomatoes, cabbage and spices (paprika, cumin, salt and pepper). Mix everything well.
Add the bulgur and vegetable stock. Bring to the boil, then reduce the heat and simmer for about 15-20 minutes, or until the bulgur is cooked and the vegetables are tender.
Adjust the seasoning to your taste, then serve hot.
