Here is a simple and delicious recipe for vegetarian chili:

Ingredients :
2 tablespoons of olive oil
1 onion, chopped
2 cloves of garlic, minced
1 red pepper, diced
1 green pepper, diced
1 zucchini, diced
1 can (400 g) red beans, rinsed and drained
1 can (400 g) black beans, rinsed and drained
1 can (400 g) crushed tomatoes
1 tablespoon of tomato paste
1 teaspoon of ground cumin
1 teaspoon of paprika
1/2 teaspoon cayenne pepper (or adjust to your spiciness preference)
Salt and pepper to taste
2 cups of vegetable broth
Fresh cilantro, chopped (optional, for garnish)
Sliced ​​avocado (optional, for garnish)
Vegan sour cream or Greek yogurt (optional, for garnish)
Corn chips or cooked rice (optional, for serving)

Instructions :
In a large saucepan, heat the olive oil over medium heat. Add the onion and sauté for about 3 minutes, until translucent.
Add the garlic and peppers, and cook for about 5 minutes more, until the peppers begin to soften.
Add the zucchini and continue cooking for 2-3 minutes.
Add the kidney beans, black beans, crushed tomatoes and tomato paste to the pot. Mix well.
Season the mixture with cumin, paprika, cayenne pepper, salt and pepper. Mix again to distribute the spices.
Pour the vegetable stock into the saucepan and bring to the boil. Reduce the heat and simmer for about 20-25 minutes, stirring occasionally, until the vegetables are tender and the chili has thickened.
Adjust the seasoning to your taste.
