Tofu Chickpea Chili
Here is a simple recipe for making tofu chickpea chili:
Ingredients :
400 g cooked chickpeas (canned, rinsed and drained)
200 g firm tofu, diced
1 onion, chopped
2 cloves of garlic, minced
1 red pepper, diced
1 green pepper, diced
1 can (400 g) crushed tomatoes
2 tablespoons of tomato paste
1 tablespoon of olive oil
1 teaspoon of cumin powder
1 teaspoon of paprika
1/2 teaspoon cayenne pepper (adjust to your spiciness preference)
Salt and pepper to taste
2 cups of vegetable broth
Fresh cilantro, chopped (for garnish, optional)
Sliced avocado (for garnish, optional)
Vegan sour cream or Greek yogurt (for garnish, optional)
Corn chips or cooked rice (for serving, optional)
Instructions :
In a large saucepan, heat the olive oil over medium heat. Add the onion and sauté for about 3 minutes, until translucent.
Add the garlic and diced tofu, and fry for about 5 minutes, until the tofu is lightly browned.
Add the diced red and green peppers, and cook for about 3 minutes.
Stir in chickpeas, crushed tomatoes, tomato paste, cumin, paprika, cayenne pepper, salt and pepper. Mix well to distribute the spices.
Pour the vegetable stock into the saucepan and bring to the boil. Reduce the heat and simmer for about 15-20 minutes, stirring occasionally, until the vegetables are tender and the chili has thickened.
Adjust the seasoning to your taste.
Serve the tofu chickpea chili hot, garnished with fresh cilantro, sliced avocado, vegan sour cream or Greek yogurt (if desired), and accompany it with corn chips or cooked rice.
