Cold Sea Cabbage Soup (Crambe maritime)

Ingredients :
1 bunch of maritime cabbage
1 cucumber
1 ripe avocado
1 small red onion
2 cloves garlic
2 tablespoons of lemon juice
500 ml vegetable stock (cold)
Salt and ground black pepper, to taste
Optional: Greek yogurt or crème fraîche to garnish

Instructions :
Start by removing the tough central ribs from the cabbage leaves and roughly chop the leaves.
Peel and cut the cucumber into pieces.
Peel and pit the avocado, then cut it into pieces.
Peel and finely chop the red onion and garlic.
In a blender or food processor, combine the cabbage, cucumber, avocado, red onion, garlic and lemon juice. Also add the cold vegetable stock.
Blend all the ingredients until smooth and creamy.
Season the cold sea kale soup with salt and pepper to taste. Mix well.
Taste and adjust seasoning if necessary.
Transfer the soup to an airtight container and refrigerate for at least an hour to cool completely.
When ready to serve, pour the cold sea kale soup into individual bowls and optionally garnish with Greek yogurt or crème fraîche.

This cold sea kale soup is refreshing and full of flavor. It makes an excellent light dish for hot summer days.
