Chicken breasts stuffed with creamed spinach and mushrooms.
Ingredients
2 chicken supremes
1/2 cup sliced mushrooms
1/2 cup fresh spinach leaves
1/2 cup fresh cream
1/4 cup grated mozzarella cheese
2 finely chopped shallots
1 tablespoon of oil
Salt and pepper to taste
Instructions
Preparing the oven and ingredients
Preheat your oven to 190°C (375°F).
Preparing the stuffing
In a frying pan, heat the oil over medium heat.
Add the sliced mushrooms and finely chopped shallots. Saute until the mushrooms are tender and lightly browned.
Add the fresh spinach leaves and cook them very little.
Remove from heat and let cool slightly.
Preparing the creamy filling
In a bowl, mix the cream cheese and grated mozzarella cheese.
Add the mushroom and spinach mixture to the cheese. Mix well to obtain a homogeneous stuffing.
Season with salt and pepper to taste, if needed.
Preparing the chicken breasts
Using a sharp knife, make a slit in the side of each chicken breast to create a pocket. Make sure you don't cut all the way through.
Stuff each chicken breast with the creamy mushroom and spinach mixture.
Use toothpicks to close the opening, if necessary.
Cooking chicken supremes
Place the stuffed supremes in a lightly oiled baking dish.
Bake for about 25-30 minutes, or until the chicken is cooked through and the cheese inside is melted and bubbling.
Service
Remove the supremes from the oven and let rest for a few minutes before serving.
Serve with a side dish of your choice, such as rice, pasta or salad.
