Overturned mine bowl (Déviré) Mauritius
Here is the recipe for Bol mine reversed (Déviré) from Mauritius, a tasty and visually impressive dish.
Ingredients :
Chicken: 200-300 g chicken breasts, sliced
Mine (Asian pasta): 200 g
Eggs: 2 (one per serving)
Chinese cabbage (Pak Choï or Pé-tsaï): 1 small, chopped
Carrot: 1, julienned
Black mushrooms (Shiitake): 4-5, rehydrated and cut into strips
Spring onions: 2, chopped
Garlic: 2 cloves, chopped
Fresh ginger: 2 cm, grated
Soy sauce: 3 tablespoons (divided)
Sesame oil: 2 tablespoons
Oyster sauce: 1 tablespoon
Fish sauce (Nuoc Mam): 1 tablespoon
Coriander: a few sprigs for garnish
Cornstarch: 1 tablespoon
Water: 1/4 cup
Recipe steps:
Chicken marinade:
In a bowl, mix the chicken pieces with the chopped garlic, grated ginger, 1 tablespoon of soy sauce, oyster sauce, and fish sauce.
Cover and refrigerate for at least 15 minutes to allow the flavors to develop.
Preparation of vegetables:
Slice the Chinese cabbage, carrots, and black mushrooms into thin strips.
Slice the spring onions and reserve them for cooking.
Cooking the chicken:
Heat 1 tablespoon of sesame oil in a skillet over medium-high heat.
Add the marinated chicken pieces and sauté until nicely browned and cooked through. Remove the chicken from the pan and set aside.
Cooking vegetables:
In the same pan, add another tablespoon of sesame oil.
Sauté the spring onions, carrots, black mushrooms, and Chinese cabbage for a few minutes until the vegetables are slightly tender.
Add 2 tablespoons of soy sauce, the oyster sauce, the fish sauce, a little water and the cornstarch dissolved in the water. Mix well and cook until the sauce thickens slightly.
Then add the cooked chicken and mix everything.
Cooking eggs:
In a small frying pan, cook the fried eggs. The yolks should remain runny.
Place each cooked egg in the bottom of a bowl.
Assembling the Reversed Mining Bowl:
On top of the egg in the bowl, add a good portion of the vegetable and chicken mixture.
Then add the cooked pasta on top, pressing lightly to compact everything well.
Service :
Place a plate on top of the bowl and quickly turn it over so that the contents of the bowl end up on the plate.
Decorate with sprigs of fresh coriander.
