Bibimpad Korea 비빔패드

Bibimbap is a classic Korean dish made with rice, assorted vegetables, meat, egg and hot sauce. Here's how to prepare it.

Ingredients :
White rice: 2 cups (sushi rice or short grain rice)
Meat (beef, chicken or pork): 200 g, cut into thin strips
Vegetables :
Spinach: 1 cup, blanched
Carrots: 1, julienned
Zucchini: 1, julienned
Shiitake mushrooms: 4-5, thinly sliced
Bean sprouts: 1 cup, blanched
Kimchi (optional): 1/2 cup
Egg: 2 (one per serving, pan-fried or poached)
Gochujang (Korean chili paste): 2-3 tablespoons
Sesame oil: 2-3 tablespoons
Garlic: 2 cloves, minced
Sesame seeds: 1 tablespoon, toasted
Soy sauce: 2 tablespoons
Sugar: 1 teaspoon
Salt and pepper: to taste

Preparation :

Cooking rice:
Rinse the rice in cold water until the water runs clear. Cook the rice according to package directions, then let it sit.

Preparation of the meat:
Marinate the strips of meat with soy sauce, minced garlic, a teaspoon of sugar, salt, pepper, and a tablespoon of sesame oil. Leave to marinate for 15 to 20 minutes.
Heat a pan with a little sesame oil, then cook the meat until nicely browned. Reserve.
Preparation of vegetables:
Spinach: Blanch the spinach in boiling water for 30 seconds, then drain. Mix them with a little sesame oil and salt.
Carrots, zucchini and mushrooms: Heat a little sesame oil in a pan, and sauté each vegetable separately until tender but still crunchy. Season lightly with salt.
Soybean sprouts: Blanch them quickly, then drain them and season them with a little salt and sesame oil.

Cooking the egg:
Cook the eggs to your liking, either fried with the yolk runny, or poached.

Assembling the bibimbap:
In a large bowl, place a portion of rice at the bottom.
Arrange the prepared vegetables, cooked meat, and kimchi (if using) on ​​the rice in separate sections, so that each ingredient is visible.
Add the cooked egg to the center.

Service :
Add a spoonful of gochujang on top, as well as a drizzle of sesame oil.
Sprinkle with toasted sesame seeds.
To eat, mix all ingredients together well to combine flavors.

Advice :
You can vary the vegetables according to the season and your personal tastes. Pickled cucumbers or radishes also work well.
The gochujang is essential to add the spicy and savory touch of the bibimbap, but you can adjust the quantity according to your tolerance for chili.
