Manger Main Oysters Spinach
A simple and refined recipe to enjoy oysters in an original way, paired with creamy spinach and a touch of lemon freshness.
Ingredients:
- 8 oysters
- 1 bunch of spinach
- 1 small red onion
- 500 ml vegetable stock (cold)
- Salt and freshly ground black pepper, to taste
- Fresh cream
- Lemon juice
- Agar-Agar
Instructions:
1. Preparing the spinach:
- Remove the tough central veins from the spinach leaves and roughly chop them.
2. Preparing the onion:
- Peel and finely chop the red onion.
3. Blending the ingredients:
- In a blender or food processor, add the spinach, fresh cream, and red onion.
- Also, add the cold vegetable stock.
- Blend until smooth and creamy.
4. Seasoning:
- Add salt and pepper to taste.
5. Adding the Agar-Agar:
- Stir in the Agar-Agar and mix well.
- Bring the mixture to a boil.
- Taste and adjust the seasoning if necessary.
6. Assembling:
- Place an oyster in a mold and cover it with the spinach soup.
7. Refrigerating:
- Transfer the preparation to an airtight container and refrigerate for at least one hour to chill completely.
8. Serving:
- When ready to serve, carefully unmold the oysters and drizzle some lemon juice over each portion.
