Wild Boar Ribs with Oranges


Ingredients (for 4 to 6 people)

  • 4 to 6 wild boar ribs marinated in Madiran (at least 4 to 5 days)
  • 2 oranges (zest and juice)
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 minced garlic cloves
  • 1 chopped onion
  • Salt and ground black pepper
  • Olive oil

Instructions

  1. Season the ribs
    Season the wild boar ribs with salt and ground black pepper.

  2. Cook the ribs
    In a large pan or pot, heat some olive oil over medium-high heat. Add the wild boar ribs and brown them on each side for a few minutes until golden. Remove them from the pan and set aside.

  3. Prepare the orange sauce
    In the same pan, add more olive oil if necessary, then add the chopped onion and garlic. Sauté for a few minutes until tender and lightly golden. Add the orange zest, then squeeze the juice from the oranges into the pan. Mix well.

  4. Add the other ingredients
    Add the honey and balsamic vinegar. Stir well to combine all the ingredients and let it simmer for a few minutes to thicken slightly.

  5. Cook the ribs with the sauce
    Return the wild boar ribs to the pan, coating them well with the orange sauce. Lower the heat, cover, and simmer for about 1 to 1.5 hours, or until the meat is tender and fully cooked. Stir occasionally and add a little water if necessary to prevent the sauce from drying out.

  6. Serve
    Once the wild boar ribs are cooked, serve them hot with the orange sauce, accompanied by rice, roasted potatoes, or sautéed green vegetables, as desired.
