Kangaroo Burgers with Sweet Potato Fritters
Ingredients
For the Kangaroo Burgers:
- 400 g ground kangaroo meat
- 1 tbsp coconut oil
- 1 egg yolk
- 1 small brown onion (peeled and finely chopped)
- 1 tbsp cumin
- 1 red chili (long, seeded, and finely chopped)
- 1 garlic clove (finely chopped)
- 1 tbsp Dijon mustard
- 1/2 bunch of coriander (roughly chopped)
- Sea salt
For the Sweet Potato Fritters:
- 2 medium sweet potatoes, peeled and grated
- 2 tbsp coconut oil (or ghee or butter)
- 1 egg yolk
- 1/2 tsp ground cumin
- 2 tbsp all-purpose flour
- Sea salt
- Black pepper
Garnish:
- Arugula
- Tomato slice
- 1 avocado, sliced (for garnish)
Instructions
For the Burgers:
- In a large bowl, mix the ground kangaroo meat, chopped onion, garlic, chili, Dijon mustard, egg yolk, cumin, coriander, salt, and pepper. Mix well until all ingredients are evenly combined.
- Shape the mixture into burger patties.
- Heat a little coconut oil in a pan over medium heat. Cook the kangaroo burgers for about 4 to 5 minutes on each side, or until they are fully cooked and golden on the outside. Be careful not to overcook, as kangaroo meat is lean and can dry out quickly.
- Set the burgers aside and keep them warm.
For the Sweet Potato Fritters:
- In another bowl, combine the grated sweet potatoes, egg yolk, flour, cumin, salt, and pepper until you get a homogeneous mixture.
- Heat some coconut oil in another pan over medium heat. Drop small portions of the sweet potato mixture into the pan, flattening them slightly with the back of a spoon to form fritters.
- Cook the fritters for about 3 to 4 minutes on each side, or until golden and fully cooked. If necessary, cook them in batches depending on the size of your pan.
Assembling the Burgers:
- On each sweet potato fritter, place a cooked tomato slice.
- Add a cooked kangaroo burger.
- Top with diced avocado and arugula.
- Cover with another sweet potato fritter to form the burger.
