Banana Chocolate Muffins with Green Banana Flour

(Gluten-free and vegetarian)

Ingredients:

  • 150 g green banana flour
  • 2 ripe bananas
  • 2 tablespoons pure cocoa powder
  • 80 g cane sugar
  • 30 g shredded coconut
  • 120 ml almond milk
  • 50 ml melted coconut oil
  • 2 eggs
  • 1 packet of baking powder

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Mash the bananas in a large bowl until smooth.
  3. Add the eggs, cane sugar, melted coconut oil, and almond milk. Mix well until combined.
  4. Fold in the green banana flour, cocoa powder, shredded coconut, and baking powder. Stir gently until the batter is smooth and lump-free.
  5. Divide the batter into greased muffin tins or paper liners.
  6. Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool on a rack before serving.

These muffins make a perfect healthy, gluten-free, and delicious chocolatey snack!
