Banana Chocolate Muffins with Green Banana Flour
(Gluten-free and vegetarian)
Ingredients:
- 150 g green banana flour
- 2 ripe bananas
- 2 tablespoons pure cocoa powder
- 80 g cane sugar
- 30 g shredded coconut
- 120 ml almond milk
- 50 ml melted coconut oil
- 2 eggs
- 1 packet of baking powder
Instructions:
- Preheat the oven to 180°C (350°F).
- Mash the bananas in a large bowl until smooth.
- Add the eggs, cane sugar, melted coconut oil, and almond milk. Mix well until combined.
- Fold in the green banana flour, cocoa powder, shredded coconut, and baking powder. Stir gently until the batter is smooth and lump-free.
- Divide the batter into greased muffin tins or paper liners.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool on a rack before serving.
These muffins make a perfect healthy, gluten-free, and delicious chocolatey snack!
