Scandinavian Whale Meat Burger

Ingredients:

For 4 servings

  • 500 g of whale meat, minced (if available, otherwise a similar meat like venison can be used)
  • 1 egg
  • 1 red onion, finely chopped
  • 2 cloves of garlic, crushed
  • 1 tablespoon Dijon mustard
  • 1 tablespoon breadcrumbs (optional, for texture)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil or butter for cooking

For the garnish:

  • 4 hamburger buns, preferably lightly toasted
  • 4 lettuce leaves
  • 4 slices of Norwegian cheese (such as brunost) or a mild cheese
  • 1 red onion, sliced
  • Sliced pickles
  • Dill sauce:
    • 200 ml sour cream
    • 1 tablespoon fresh dill, chopped
    • Juice of half a lemon
    • Salt and pepper

Instructions:

  1. Prepare the meat patties:

    • In a large bowl, mix the minced whale meat, egg, chopped onion, garlic, mustard, and breadcrumbs. Season with salt and pepper.
    • Form 4 patties of even thickness.
  2. Cooking:

    • Heat a pan with a little olive oil or butter.
    • Cook the patties for about 3 to 4 minutes on each side (depending on thickness), being careful not to overcook them to preserve their tenderness.
  3. Prepare the dill sauce:

    • Mix the sour cream, dill, lemon juice, salt, and pepper. Set aside in the refrigerator.
  4. Assemble the burger:

    • Spread a thin layer of dill sauce on the bottom of the bun.
    • Add a lettuce leaf, the whale meat patty, a slice of cheese, onion rings, and pickles.
    • Top with the other half of the bun.
  5. Serve:

    • Serve immediately, accompanied by sautéed potatoes or a Scandinavian-style salad.
