Scandinavian Whale Meat Burger
Ingredients:
For 4 servings
- 500 g of whale meat, minced (if available, otherwise a similar meat like venison can be used)
- 1 egg
- 1 red onion, finely chopped
- 2 cloves of garlic, crushed
- 1 tablespoon Dijon mustard
- 1 tablespoon breadcrumbs (optional, for texture)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil or butter for cooking
For the garnish:
- 4 hamburger buns, preferably lightly toasted
- 4 lettuce leaves
- 4 slices of Norwegian cheese (such as brunost) or a mild cheese
- 1 red onion, sliced
- Sliced pickles
- Dill sauce:
- 200 ml sour cream
- 1 tablespoon fresh dill, chopped
- Juice of half a lemon
- Salt and pepper

Prepare the meat patties:
- In a large bowl, mix the minced whale meat, egg, chopped onion, garlic, mustard, and breadcrumbs. Season with salt and pepper.
- Form 4 patties of even thickness.

Cooking:
- Heat a pan with a little olive oil or butter.
- Cook the patties for about 3 to 4 minutes on each side (depending on thickness), being careful not to overcook them to preserve their tenderness.

Prepare the dill sauce:
- Mix the sour cream, dill, lemon juice, salt, and pepper. Set aside in the refrigerator.

Assemble the burger:
- Spread a thin layer of dill sauce on the bottom of the bun.
- Add a lettuce leaf, the whale meat patty, a slice of cheese, onion rings, and pickles.
- Top with the other half of the bun.
