SPAGHETTI WITH CHICKEN AND LEMON CREAM SAUCE

Here's a simple and delicious recipe for spaghetti with chicken and lemon cream sauce:

Ingredients:

  • 250g spaghetti
  • 2 chicken breasts, diced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 200ml heavy cream
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Grated Parmesan (optional)

Instructions:

  1. Cook the spaghetti: Boil the spaghetti in a large pot of salted water according to the package instructions, until al dente. Drain and reserve a cup of pasta cooking water.

  2. Prepare the chicken: Meanwhile, heat the olive oil in a large pan over medium heat. Add the diced chicken and cook until golden brown and cooked through.

  3. Add the garlic: Add the minced garlic to the pan and sauté for about a minute, until fragrant.

  4. Add the lemon: Add the zest and juice of the lemon to the pan. Stir to coat the chicken well.

  5. Make the sauce: Lower the heat to medium-low and pour the heavy cream into the pan. Let it simmer for a few minutes until the sauce thickens slightly.

  6. Combine the pasta: Add the cooked spaghetti to the pan and toss to coat with the sauce. If the sauce is too thick, add some reserved pasta water to thin it slightly.

  7. Season and finish: Season with salt and pepper to taste. Add the chopped fresh parsley and mix once more.

  8. Serve: Serve hot, garnished with grated Parmesan if desired.
