Ingredients:

  • 3 fresh eggs
  • 50 g of camembert (cut into small pieces)
  • 1 tablespoon of butter
  • 1 tablespoon of oil (olive oil or other)
  • Pepper, to taste
  • 1 to 2 tablespoons of Normandy cream
  • A pinch of salt (optional)

Preparation:

  1. Prepare the eggs: Crack the eggs into a bowl, add a pinch of salt (if desired) and pepper. Beat the eggs with a fork or whisk until the mixture is well combined. Add 1 to 2 tablespoons of Normandy cream for an even creamier and richer texture.

  2. Heat the pan: In a pan, heat the butter and oil over medium heat. Mix the two fats together to prevent the butter from burning.

  3. Cook the eggs: Pour the egg mixture into the hot pan. Let it cook for about 1 to 2 minutes. Using a spatula, gently lift the edges of the omelette to allow any liquid still present in the omelette to flow to the edges and cook evenly.

  4. Add the camembert: When the omelette is almost cooked but still slightly runny, add the camembert pieces to one half of the omelette. Let the cheese melt for a few seconds.

  5. Fold the omelette: Once the cheese has melted, fold the omelette in half using a spatula.

  6. Finish: Let the omelette sit in the pan for a few more seconds to fully melt the camembert inside.

  7. Serve: Remove the omelette from the pan and serve immediately. For a complete breakfast, you can pair the omelette with toasted bread slices, fresh fruit, or a light salad.
