Ingredients:

  • 2 pig's feet (cut into pieces)

  • 2 tomatoes, diced
  • 3 garlic cloves, chopped
  • 2 potatoes, chopped
  • 2 carrots, sliced
  • 1 stalk celery, chopped
  • 1 cup corn kernels (if available)
  • 1 handful green peas
  • 1 bay leaf
  • 1 tablespoon cumin
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon dried oregano
  • 1 meat or chicken bouillon cube (optional)
  • 2 tablespoons vegetable oil
  • 1 lime (for deglazing)
  • Salt and pepper to taste

Instructions:

Preparing the pig's feet:

  1. Wash the pig's feet thoroughly. In a large pot, boil the feet with a bit of salt and a slice of lime for about 30 minutes to remove impurities and fat.
  2. Drain the pig's feet and set aside.

Preparing the stew:

  1. In a large saucepan, heat the oil and sauté the onion and garlic until golden and fragrant.
  2. Add the diced tomatoes and cook until they soften and form a sauce.
  3. Add the vegetables: potatoes, carrots, celery, corn, and green peas. Sauté everything for a few minutes.

Cooking the pig's feet:

  1. Add the pig's feet to the saucepan with the vegetables.
  2. Cover with water or meat/chicken broth, add the bay leaf, cumin, oregano, and a bit of salt and pepper.
  3. Simmer on low heat for 2-3 hours, or until the pig's feet are tender and the vegetables are cooked through. You can add some water during cooking if needed.

Finishing:

  1. When the stew is ready, adjust the seasoning with salt, pepper, and a bit of lime for added freshness.
