Vegan Bruschetta

Ingredients:

  • Whole grain bread slices (make sure they are vegan)
  • Hummus
  • Zucchini, sliced thinly
  • Tomatoes, diced or sliced
  • Black olives, sliced
  • Lamb's lettuce leaves (or any other lettuce of your choice)
  • Olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
    Place the bread slices on a baking tray and toast them in the oven until they are lightly crispy.

  2. Cook the zucchini:
    Heat a little olive oil in a pan over medium heat. Add the zucchini slices and cook until they are tender and lightly golden. Remove them from the pan and set aside.

  3. Prepare the bruschetta:
    Spread a generous layer of hummus on each toasted bread slice.
    Place the cooked zucchini slices on top of the hummus.

  4. Add the tomatoes:
    Add the diced or sliced tomatoes on top of the zucchini.
    Distribute the sliced black olives over the tomatoes.

  5. Season:
    Lightly season with salt and pepper to taste.

  6. Add the greens:
    Top each bruschetta with a few lamb's lettuce leaves.

  7. Finish:
    Drizzle with a little extra olive oil before serving, if desired.

  8. Serve and enjoy:
    Serve the vegan bruschettas immediately as an appetizer or starter.
