Nolan Signature Burger

Ingredients (for 4 burgers)

  • Rustic-style buns ("bûcheron" buns):

    • 4 artisan or homemade buns (made with rye, wheat, malt, sunflower seeds, flax seeds, sesame seeds, wheat bran, malt extract, and roasted malt).
  • Camembert cider cream:

    • 150 g of Camembert cheese
    • 100 ml of dry cider
    • 1 tablespoon of thick crème fraîche
  • Thinly sliced apple:

    • 1 tart apple (e.g., Granny Smith or Pink Lady), thinly sliced.
  • Butcher-style ground beef patties:

    • 4 patties (150 g each, preferably from aged beef).
  • Camembert slices:

    • 8 thick slices (2 per burger).
  • Caramelized apple slices:

    • 2 sweet apples (e.g., Golden or Fuji)
    • 20 g of butter
    • 1 tablespoon of brown sugar

Instructions

  1. Prepare the buns

    • If the buns are not fresh, lightly reheat them in the oven for 5 minutes at 150°C (300°F) to restore their softness.
    • Slice them in half and set aside.
  2. Camembert cider cream

    • Remove the rind from the Camembert if preferred.
    • Heat the cider in a saucepan over medium heat. Add the Camembert, cut into pieces, and let it melt while stirring gently.
    • Stir in the crème fraîche to create a smooth and creamy texture. Keep warm.
  3. Caramelized apples

    • Peel and cut the apples into thick slices.
    • Melt the butter in a skillet, add the apple slices, and sprinkle with brown sugar.
    • Cook over low heat until the slices are golden and tender. Set aside.
  4. Cook the patties

    • Heat a skillet or grill with a bit of oil or butter.
    • Sear the patties over high heat for 2 to 3 minutes on each side, depending on your preferred doneness (rare, medium, or well-done). Season with salt and pepper.
    • Place the Camembert slices on top of the patties during the last minute of cooking so they melt slightly.
  5. Assemble the burgers

    • Spread a generous amount of the Camembert cider cream on the bottom half of each bun.
    • Add a few thin slices of apple for a refreshing crunch.
    • Place the beef patty with the melted Camembert on top.
    • Add a generous serving of caramelized apples.
    • Finish by placing the top bun on the stack.
  6. Serve

    • Serve immediately with sweet potato fries or a crisp green salad.

Pro Tip

Drizzle a touch of honey or a reduction of cider over the caramelized apples for an extra burst of flavor.
