Fiskesuppe is a traditional Norwegian fish soup, often made with a variety of fish, seafood, and vegetables. Here's a basic recipe:
Ingredients:
- 500g white fish fillets (such as cod)
- 250g peeled shrimp
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, diced
- 1 liter fish stock or water
- 250ml heavy cream
- 2 tablespoons butter
- Salt and freshly ground black pepper
- Fresh dill (optional, for garnish)
Instructions:
- In a large pot, melt the butter over medium heat. Add the onion and sauté until translucent.
- Add the carrots, celery, and potatoes to the pot and cook for a few minutes.
- Pour in the fish stock or water and bring to a boil. Reduce the heat and simmer until the vegetables are tender.
- Meanwhile, cut the fish fillets into pieces and add them to the soup. Simmer for a few minutes until the fish is cooked through.
- Add the shrimp to the soup and cook for a few more minutes.
- Reduce the heat to low and gently stir in the heavy cream. Season with salt and pepper to taste.
- Serve hot, garnished with fresh dill if desired. Serve with rye bread or country bread on the side.
