Fiskesuppe, Norwegian Fish Soup (English)
Fiskesuppe is a traditional Norwegian fish soup, often made with a variety of fish, seafood, and vegetables. Here's a basic recipe:

Ingredients:

  • 500g white fish fillets (such as cod)
  • 250g peeled shrimp
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, diced
  • 1 liter fish stock or water
  • 250ml heavy cream
  • 2 tablespoons butter
  • Salt and freshly ground black pepper
  • Fresh dill (optional, for garnish)

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the onion and sauté until translucent.
  2. Add the carrots, celery, and potatoes to the pot and cook for a few minutes.
  3. Pour in the fish stock or water and bring to a boil. Reduce the heat and simmer until the vegetables are tender.
  4. Meanwhile, cut the fish fillets into pieces and add them to the soup. Simmer for a few minutes until the fish is cooked through.
  5. Add the shrimp to the soup and cook for a few more minutes.
  6. Reduce the heat to low and gently stir in the heavy cream. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh dill if desired. Serve with rye bread or country bread on the side.
