Gulai Sapi is a rich and aromatic Indonesian dish made with beef slow-cooked in a spiced coconut milk sauce. Here's how to prepare this delicious meal.

Ingredients for 4 to 6 people:

  • 500 g of beef (shoulder, shank, or another tender cut), cut into cubes
  • 400 ml of coconut milk
  • 2 lemongrass stalks, crushed
  • 2 bay leaves
  • 2 kaffir lime leaves (optional)
  • 2 tablespoons of vegetable oil

For the spice paste (rempah):

  • 3 cm of fresh turmeric (or 1 teaspoon of turmeric powder)
  • 3 cm of galangal
  • 3 cm of ginger
  • 5 shallots
  • 3 garlic cloves
  • 2 teaspoons of coriander seeds
  • 1 teaspoon of black (or white) pepper
  • 1 teaspoon of fennel seeds
  • 1 teaspoon of caraway seeds
  • 2 red chilies (or more, depending on your spice tolerance)
  • 1 cinnamon stick
  • Salt to taste

Instructions

Preparing the Spice Paste:

  1. Grind the spices:
    • In a blender or food processor, add the turmeric, galangal, ginger, shallots, garlic, coriander seeds, pepper, fennel seeds, caraway seeds, red chilies, and cinnamon stick.
    • Blend until you get a smooth paste. Add a bit of water or oil if needed to help with blending.

Cooking the Gulai Sapi:

  1. Sear the beef:

    • Heat the vegetable oil in a large pot or Dutch oven over medium heat.
    • Add the beef cubes and sear them on all sides. Remove the beef and set aside.
  2. Cook the spice paste:

    • In the same pot, add the spice paste and cook over medium heat until fragrant and the oil starts to separate from the paste (about 5-7 minutes).
    • Stir regularly to prevent burning.
  3. Add the aromatics:

    • Add the lemongrass, bay leaves, and kaffir lime leaves (if using).
    • Mix well and cook for another 2 minutes.
  4. Incorporate the coconut milk:

    • Pour the coconut milk into the pot and bring it to a boil.
    • Add the seared beef cubes.
  5. Simmer:

    • Lower the heat and let the mixture simmer gently for 1.5 to 2 hours, or until the beef is tender and the sauce has thickened.
    • Stir occasionally to prevent the sauce from sticking to the pot.
    • Adjust the seasoning with salt to taste.

  1. Rest and serve:
    • Once the Gulai Sapi is cooked, remove it from the heat and let it rest for a few minutes.
