Salmon Florentine Lasagna

Ingredients for 6 servings:

For the lasagna:

  • 12 lasagna sheets (fresh or pre-cooked)
  • 600 g fresh salmon (or salmon fillets)
  • 500 g fresh spinach (or frozen spinach)
  • 200 g grated cheese (Gruyère, Emmental, or Parmesan)
  • Salt, pepper, and nutmeg

For the béchamel sauce:

  • 50 g butter
  • 50 g flour
  • 750 ml milk
  • Salt, pepper, and nutmeg

Instructions:

  1. Prepare the salmon: Cut the salmon into small cubes. Season with salt and pepper. Set aside.

  2. Cook the spinach:

    • If using fresh spinach, wash it and sauté it in a large pan with some butter or olive oil until wilted. Drain well to remove excess water.
    • If using frozen spinach, thaw it and drain thoroughly. Season with salt, pepper, and a little nutmeg.
  3. Make the béchamel sauce: In a saucepan, melt the butter over medium heat. Add the flour and stir well for 2-3 minutes to form a roux. Gradually add the cold milk while whisking to avoid lumps. Cook the béchamel sauce until it thickens. Season with salt, pepper, and a pinch of nutmeg. Set aside.

  4. Assemble the lasagna: Preheat the oven to 180°C (350°F). In a baking dish, start by spreading a thin layer of béchamel sauce on the bottom. Place a layer of lasagna sheets on top. Add a layer of spinach, followed by the salmon cubes. Cover with béchamel sauce. Repeat the layers, alternating lasagna sheets, spinach, salmon, and béchamel until all ingredients are used up. Finish with a layer of béchamel sauce. Generously sprinkle grated cheese on top.

  5. Bake: Place the dish in the oven and bake at 180°C for about 35-40 minutes, until the top is golden and the lasagna is cooked through.

  6. Rest and serve: Let the lasagna rest for a few minutes before cutting and serving. This will allow the layers to set and make serving easier.

Tips:

  • You can add a layer of fresh cream between the layers for an even creamier texture.
  • Serve with a green salad for a complete meal.
