Fried Chicken "KFC" Style - Copycat Recipe

Ingredients

For the Marinade:

  • 1 kg chicken pieces (thighs, drumsticks, wings, etc.)
  • 250 ml buttermilk
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Spicy Coating:

  • 300 g flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground ginger
  • (Optional) ¼ teaspoon cayenne pepper for a mild kick

For Frying:

  • Vegetable oil (enough for deep frying)

Preparation

Marinating the Chicken:

  1. In a large bowl, mix the buttermilk with the salt and pepper.
  2. Add the chicken pieces, making sure they are well-coated.
  3. Cover and refrigerate for at least 2 hours, ideally overnight.

Preparing the Coating:

  1. In a large dish, combine the flour and all the spices.
  2. Take the chicken pieces out of the marinade (letting the excess drip off) and roll them generously in the flour mixture. Press down to ensure the coating sticks well.

Frying:

  1. Heat the oil in a deep fryer or a large pot to about 175–180°C. Use a cooking thermometer to check the temperature.
  2. Fry the chicken pieces in batches to avoid overcrowding the pot. Each piece should cook for about 12 to 15 minutes, turning occasionally, until golden brown and the internal temperature reaches at least 75°C.
  3. Drain the fried chicken on paper towels.

Serving:

  1. Serve hot, accompanied by fries, salad, or any other side dish of your choice.

Notes:

  • Oil Temperature: Make sure to maintain the proper oil temperature to achieve a crispy coating without absorbing too much oil.
  • Adjustments: Feel free to adjust the spices to your personal preferences.
