Ingredients (for 4 servings):
- 250 g tagliolini (or linguine)
- 200 g fresh or smoked salmon, diced
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 150 ml heavy cream
- 100 ml dry white wine
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 tablespoons fresh dill, chopped
- Salt and freshly ground black pepper, to taste
Instructions:
-
Cooking the pasta: Cook the tagliolini in a large pot of boiling salted water according to the package instructions, until al dente. Drain and reserve a cup of pasta cooking water.
-
Making the sauce: In the meantime, heat the olive oil in a large skillet over medium heat. Add the shallot and garlic, and sauté until soft and slightly golden.
-
Cooking the salmon: Add the diced salmon to the skillet and cook for a few minutes, until slightly browned.
-
Deglaze with white wine: Pour in the white wine and let it simmer for a few minutes, until it reduces by half.
-
Making the creamy sauce: Add the heavy cream to the skillet and mix well. Let it simmer for a few minutes, until the sauce thickens slightly.
-
Seasoning: Add the lemon juice and chopped dill to the skillet. Season with salt and freshly ground black pepper to taste.
-
Tossing the pasta and sauce: Add the cooked tagliolini to the skillet and toss them well with the sauce. If the sauce is too thick, add a little reserved pasta cooking water to thin it out slightly.
