Here’s a recipe for Tagliolini al Salmone:

Ingredients (for 4 servings):

  • 250 g tagliolini (or linguine)
  • 200 g fresh or smoked salmon, diced
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 150 ml heavy cream
  • 100 ml dry white wine
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh dill, chopped
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Cooking the pasta: Cook the tagliolini in a large pot of boiling salted water according to the package instructions, until al dente. Drain and reserve a cup of pasta cooking water.

  2. Making the sauce: In the meantime, heat the olive oil in a large skillet over medium heat. Add the shallot and garlic, and sauté until soft and slightly golden.

  3. Cooking the salmon: Add the diced salmon to the skillet and cook for a few minutes, until slightly browned.

  4. Deglaze with white wine: Pour in the white wine and let it simmer for a few minutes, until it reduces by half.

  5. Making the creamy sauce: Add the heavy cream to the skillet and mix well. Let it simmer for a few minutes, until the sauce thickens slightly.

  6. Seasoning: Add the lemon juice and chopped dill to the skillet. Season with salt and freshly ground black pepper to taste.

  7. Tossing the pasta and sauce: Add the cooked tagliolini to the skillet and toss them well with the sauce. If the sauce is too thick, add a little reserved pasta cooking water to thin it out slightly.

  8. Serving: Serve hot, garnished with additional fresh dill if desired.
